Bailey’s Irish Cream Chocolate Cake

2 cups flour
1 3/4 cups sugar
3/4 cup unsweetened cocoa powder
1/2 tsp salt
1 tbsp soda
1 egg
2/3 cup salad oil
3/4 cup buttermilk
1/4 cup Bailey’s Irish Cream
1 cup hot strong coffee

Sift flour, sugar, cocoa, salt and soda together. Beat egg, oil, buttermilk, liqueur and coffee. Add to dry ingredients, beat together for about 3 minutes. Pour into greased and floured 10 inch springform or 9 x 13 inch cake pan. Bake springform pan 35-40  minutes. 9 x 13 inch pan 25-30 minutes. 350 degrees. Frost with frosting below:

2 cups heavy cream
4 tbsp Bailey’s Irish Cream
1/4-1/2 cup powdered sugar

Beat frosting ingredients together till stiff. Turn cake out onto a plate and frost with whipped cream frosting. Sprinkle with chocolate curls. Refrigerate.
