Black Bean Salad

1 large lemon
1 large avocado
1 Tbsp. Fresh cilantro (or ¼ tsp dried)
¼ tsp salt
1 – 11 oz can whole kernel corn with red & green peppers (drained)
1 – 16 oz can black beans (rinsed & drained)

Squeeze juice of the lemon into medium bowl.  Dice avocado; stir into lemon juice with cilantro, salt, corn & black beans.

If you wish, arrange lettuce leaves on a plate and spoon bean mixture on lettuce or just serve in a bowl.
