Italian Sausage Soup

  • 1 pound italian sausage
  • 2 clove garlic cloves, choopped
  • 1 large onion, chopped
  • 1 – 28 oz can plum tomatoes, chopped
  • 2 1/2 quarts beef broth
  • 3/4 cup red wine
  • 1 1/2 Tbsp chopped parsley
  • 1 tsp dried basil
  • 1/2 medium green pepper
  • 2 cups cooked Bowtie pasta
  • DIRECTIONS
    1. Break up sausage as you brown it along with the garlic and onion.
    2. When meat is browned, drain off excess fat.
    3. Add tomatoes, beef stock, wine, parsley and basil. Simmer for 30 minutes, stirring occasionally.
    4. Add green pepper and cook 15 minutes more.
    5. Add cooked pasta to the hot soup.
    6. Top with grated Parmesan Cheese if you’d like

    Makes 12 servings.
